And so the Christmas season is over and with it, the gluttony, er, over eating we indulged in. It is time to shed those extra pounds and make ourselves believe that 2009 is just the best year to slim down and take control of our health. And HotMomma declares this is the right time.

I am sharing one healthy alternative to meat. It’s a tuna dish that packs with it not only nutrients but also convenience in preparing it. Oh, it’s great for busy moms and fussy eaters, too!

I call it tuna balls on spinach. Quite original, don’t you agree?

It’s just a matter of frying tuna flakes. Fresh or canned is fine but if you use fresh tuna, you will have to boil it in very little water and salt until it’s dry. For this time, I used the canned variety because that was what I had. I mixed it with one egg, a teaspoon of flour, salt and pepper to taste and thinly-sliced spinach.

I took this picture halfway through the frying so there’s not a lot of it left here.

Fry the balls in sunflower or olive oil – very little is required, by the way, especially if you are using non-stick pan. Remember to put it on medium fire because you will want to cook the balls down to the core.

After frying, drain the oil from the tuna balls. Wilt around 10 grams of spinach in butter in the same pan. Don’t forget to remove the frying oil first, ok? Add two tablespoon of soy sauce and transfer it to a plate. This should not take more than five minutes. Put the balls on top of the spinach and this what you get.


Serve it with steamed rice or tortilla wraps – just use your imagination with the wraps. Flatten the tuna balls, perhaps? Happy eating!

    btw, thanks for sharing this recipe. the only recipes i know using tuna are tuna spaghetti and just sauteed. =)
