There is this ongoing campaign by one famous chef here in the UK to teach and encourage the British people to cook healthy and easy-to-prepare dishes for the whole family, and pass on the recipes to friends and family. I am interested to see how this will fare because it would be a significant change in this country if he succeeds.
I have noticed here that because of the affluence of the people, they prefer to eat out rather than cook at home. Whatever is cooked at home would just be the frozen-microwave variety. My husband, who works as a Mobile Radiographer and stays in different hotels often, says that he sees whole families having breakfast (at least during weekends) and dinner in restaurants. The ubiquitous English pub is also a testament to this penchant for eating out.
I have nothing against eating out. Actually, I would appreciate the occasional special family dinner with food not prepared by me. Having said that, I am a firm believer that home-cooked meals are the best way to bring up kids on.
Besides, being the control freak that I am, I keep on thinking whatever those cooks or chefs are doing with my food back in their kitchen before it gets to me. I had this horrible experience of walking into a Chinese restaurant back in the Philippines where I got served the best Chinese food ever (or maybe because I was starving that time?). Then, after the meal, I went to their restroom behind the restaurant and saw the dirty kitchen floor and the whole messy, despicable kitchen! I wanted to be sick that time.
So, anyway, going back to the topic on home-cooked meals, I always make sure that I am ready to whip up something filling when needed. I have some tricks up my sleeve, one of which I will share with all of you now.
Meat balls and burger patties can be bought straight from the freezer of our supermarket. In our case, however, I prepare them myself, using my own secret ingredients. I pop them in the freezer and bring them out when I need them.
Just like last night, my hubby came home from a two-hour drive from work. I wanted to impress him and came up with this one:
I sauteed my meatballs in hoi shin sauce, ketchup, soy sauce, honey and loads of chopped onions. Then, I dumped some sliced flat mushrooms and diced capsicum on top of it, added half cup of boiling water and that’s it! He enjoyed it with a pile (i mean, a pile) of steamed rice and that was all he needed to smile again.
