Presentation is very important in cooking. It is almost unthinkable to serve something tasty yet with an unappealing appearance. I usually get challenged by some vegetables that change color with overcooking or when mixed with something acidic like vinegar. Have you ever got served with broccoli that was not as green as it should be?
When cooked solo, it is easy to preserve the good appearance of veggies. It’s when they are cooked with fish or meat that things get a little bit more tricky. My usual solution to this is to cook the ingredients separately and then just combine them together. Like what I did with this beef dish with broccoli and sugarsnap peas.
I just boiled these in very little beef broth with salt to at least half-cooked.
Then, I sauteed the beef which was pre-boiled for a loooooong time in my sloooooow cooker. I put ginger, onions, soy sauce, oyster sauce and honey (my favourite secret ingredient).
See, they were cooked separately and you will see that the greens remained green.
But it didn’t look this presentable for long after my boys sniffed its aroma and traced it to the dinner table.
