From HotMomma’s Kitchen: A Series

To continue with the food theme we are having these days, I want to share something from my snacks treasure. They (whoever they are) say that necessity is the mother of all invention. Well, in my case, I have proven this to be true especially with regards to my effort to be a step ahead of my two fast-growing boys with incredible appetites.
I can tell you that a hundred different ideas race through my mind all the time just so I can come up with appetizing food to serve them. However, most often than not, it is the simplest ideas that truly deliver when it comes to satisfying all my criteria for kiddie foods:
- Nutritious
- Easy to prepare
- Easy to eat
- Easy on the pocket
Like the one I am sharing with all of you. This one is not really unique for me to be able to claim that I invented it. It’s the process of perfecting it that makes me feel it is my own. You see, I am one cook who cannot read a cookbook. I mean, I find it so confining and limiting. I am poor in Math so I don’t like measuring. I am a rebel so I don’t like to follow rules (just don’t you tell this to my kids). I don’t have a cookbook so I can’t consult one even if I want to. So, basically, food ideas for me usually come from the TV if I happen to glance at a food served on a show or program, or supermarket magazines.
So, anyway, we call this Bread-zza. It’s easy and fast to prepare, it’s nourishing and filling and is super yummy (that’s according to the kids as I haven’t tasted it because it has ham).
One time I walked into my kitchen with my kids’ grumbling as a background. They were hungry, they wanted food as fast as possible and I haven’t gotten anything ready yet. Earlier that day, I was worried that I was soon to throw away a loaf of bread because it was about to expire. When I looked in the fridge, I found these ingredients:
Something in my brain just clicked and up came this image of bread topped with the ingredients that were available that time. So, I thought of making Bread-zza!
I cut the slices of bread into half, then I grabbed my ever-ready Heinz ketchup, splattered and spread a good amount on each half of sliced bread. Then I arranged all the ingredients and sprinkled grated cheese (mozzarella and cheddar) on top and the result were these:
I popped them into the oven and cooked them until I could see browning on the cheese. Out came these:
I used up almost all of the loaf that first time. When my kids’ friends tasted them, they loved ‘em too! It’s now a regular fare.
So, if you don’t have anything to serve your kids, try this one. It’s no hassle for busy moms and hungry kids.
Note: I don’t have a sophisticated camera so maybe, it’s not clear what that brown stuff on the foreground of the first photo is. That’s frozen mushroom.
