I saw this lovely thing in one of our Bible Studies. My friend made some for us. Unfortunately, she used chicken, which is something I won’t consider eating. So, true to HotMomma’s adventurous nature, I gave it a twist and came up with my own version – my Tortilla Veggie Magic.

Yes, this is a nutritious snack for the whole family as it is purely non-fattening stuff. This is how it came to be:

A ready-made, off-the-supermarket-shelf tortilla plopped down on my pan. The pan was just warming up on very, very low heat.

As if by some magic, a mixture of finely-chopped capsicum, grated courgette seasoned with a pinch of salt and a dash of sugar magically appeared on half of the tortilla.

Then a generous amount of grated mozarella and cheddar cheese started to rain down on top of the mixture. And since the pan and the tortilla was slowly getting warm at this point, the cheese started to melt and ooze and run.

The tortilla suddenly became very shy and it just folded down in half to obscure whatever was there.

This lovely man could not wait to sample it. He took a bite…

But I had more sense and so I cut it to more dainty pieces and remembered to use my favourite sweet and sour chili sauce.


Hmmmm…. Muy delicioso!

    We call those Quesadilla’s and here they’re supposed to be a mexican cuisine. I saute Onions and bell peppers and then put those on the tortilla then the cheese and fold it over. We serve it with a tomato and jalapeno salsa, really good stuff.

    we also eat tortilla from time to time, veggies alone or with chicken, it doesn’t matter–it is yummy!!just be generous with your toppings ; )
